Often times many staff members join an expedition simply for the experience and because they enjoy it so much. You will see very quickly that even off-duty staff works very hard to provide our guests with the best. Staff tips are accepted and appreciated.
No experience is necessary for these flat water-paddling adventures. All trips include a river hardened guide, top-notch equipment, shuttles, and competent instruction on efficient paddling and river safety.
Many people have misconceptions about kayaks being "tippy" or are afraid of being connected to the boat if it tips. You will be pleasantly surprised when you see that these boats are much more stable than canoes, and that you would fall right out if you would tip, which is very rare. In addition to being faster and more stable than canoes, these boats offer less wind resistance in a high wind setting. Double and single kayaks are available. - Sandbar Hoagies. Huge hoagie sandwiches made with fresh cut deli meats, crisp garden veggies, and tasty cheeses. This is a stacker with all the amenities- a work of art.
- Chicken Caesar Wraps.Grilled chicken breast chunks tossed in chopped romaine lettuce, Caesar dressing and grated Parmesan cheese. Wrapped up in a warm tortilla shell.
- Cajun Chicken Linguini. Cajun grilled chicken breast, served over a bed of steaming linguini noodles that have been tossed in a zesty rendition of our own Alfredo sauce. Topped with fresh grated Parmesan cheese, and grilled red bell peppers. Served with baked garlic bread.
- Fish Tacos.Fried walleye chunks tossed in chopped romaine lettuce, mango salsa and grated cheese. Wrapped up in a warm tortilla shell.
- Grilled Chicken Pasta Salad. Tri color rotini tossed with lemon pepper grilled chicken breast chunks, topped with an Italian dressing sauce.
- Mighty Mo dinner. Fresh walleye with wild asparagus and morel mushrooms.
- Authentic Indian Tacos.This one is a secret!
- Drunken Chicken. Beer can chicken smoked to perfection!
- Sausage Rigatoni. Four cheese rigatoni with buffalo sausage in a garlic and herb white wine sauce.
- Mandarin Asian Salad. A crisp mix of organic spinach and salad greens with almond slices and chow mien noodles toped with lemon pepper chicken, drizzled in a wild beery vinaigrette and dressed with mandarin oranges.
Appetizers Snacks, & Finger food
- Tuscan Bruschetta…Toasted rounds of garlic bread topped with our homemade blend of diced firm tomatoes, fresh basil, and spices. Sprinkled with fresh grated mozzarella.
- Eight Layer Dip… ‘Eight layers of flavor'! Fresh guacamole, salsa, black bean relish, diced tomatoes, shredded cheeses, sour cream, black olives, and shredded lettuce- ready to be scooped up atop a tortilla chip.
- Quesadilla Platter…Two Flour tortillas with cheese, salsa, and black bean relish sandwiched in between. Grilled to melted perfection, cut into triangles and served with shredded lettuce, and salsa.
- Fire- Toasted Cheese, Apple and Crackers al Fresco… A hearty slice of firm, tasty provolone cheese toasted over an open fire, until soft in the middle, and slightly brown. Served with fresh apple wedges and cracker assortment. Perfectly complimented with a bottle of Chardonnay, or a sparkling cider.
- MRE's Custom ‘Throwed' Buffalo Wings…The perfect blend of South Dakota clover honey, Thai red pepper paste, and a few secret ingredients give these wings a taste you won't soon forget! Fire roasted, then finished in a manner that is distinctly different from others. Hot, sweet, and sticky!
Dutch oven and Grill
- Burgers and Brats… Fresh, lean ground beef and plump, gourmet brats grilled to simple perfection over an open fire, nestled in a bakery fresh bun, and served with our own potato salad, chips, and an awesome view of the Missouri River.
- Smoked BBQ Ribs…A large rack of fresh pork ribs smoked, braised and then dipped in our homemade strawberry barbecue sauce. Finished by grilling to perfection over a hardwood fire. Served with fresh cornbread muffins, kettle roasted sweet corn on the cob, and our potato salad.
- Pan-fried Walleye Dinner… This is more than fish'n chips! Handsome fillets of fresh walleye, hand dipped then fried to golden in a Dutch Oven Kettle. Our chef seasons them to perfection, and lays them atop a pile of gourmet haystack potatoes. Served with our own potato salad.
- Petite Black Angus filet en' croutte… 6 ounces of prime beef, topped with a dollop of creamy garlic and pepper mashed potatoes, then wrapped in fresh dough and baked in a Dutch Oven over a hardwood fire.
- The Diamond Jim… Named after the legendary southern gourmet, this is a gastronomical extravaganza!
For this meal, we use several Dutch Ovens of various sizes, stacked upon each other, to form a pyramid shaped column several feet tall. This allows us to create a multi- course dinner that will feed several adults to the point of excess. We customize this selection to fit your groups' tastes. This is a premium dinner, served in large portions and accompanied by a fascinating oral history of this dinners namesake, ‘Diamond Jim' Brady with libations to match the meal.
All dinners served at twilight- between the sunsets that light up the chalk stone bluffs of Nebraska and South Dakota in a brilliant orange, and the star filled night sky of the Missouri. The stars seem like a stellar blast of glitter overhead, as you listen to the waves gently lapping against the pebble beach, and the coyotes singing in the distance. The aromas emanating from the gourmet creations will accent the wonderful smell of wood smoke from the evening campfire.
